Mass produced honey is usually pasteurised and filtered and very often blended.
Pasteurisation is process where a product is heated to destroy any bacteria and other microorganisms in a product. The term is most often used for milk (which is usually pasteurised). But honey is naturally anti bacterial, it doesn’t go off. Honey has been found in Egyptian tombs and, 3000 years on it’s still perfectly edible. The target of pasteurisation in honey is yeast. The disadvantage of yeast in honey is that it can cause the honey to crystallise. But, pasteurisation can totally destroy the enzyme that is responsible for producing Hydrogen Peroxide in honey. Hydrogen peroxide is one of the main anti bacterial components of honey so pasteurisation can seriously damage the anti bacterial activity of honey.
Active Manuka Honey also has the Unique Manuka Factor so it will retain this anti bacterial activity but why not benefit from both by making sure your Manuka Honey is unpasteurised. Raw Manuka Honey is unpasteurised.
Mass produced honey is usually filtered to remove bits of wax and other particles. This helps the appearance of the honey but also, again, delays crystallisation. If the filtration is too fine then it will also remove pollen and propolis.
There are anywhere between 5000 and 500,000 pollen grains in just 10g of Raw Honey (depending on the variety). There is still much research to be done but, pollen is an important source of phytonutrients (plant nutrients) and has been known to reduce allergies, such as hay fever, by desensitising the immune system. I don’t know about you but I’d rather have the health benefits than clearer honey.
Propolis is another amazing substance that more is being discovered about. It’s a thick resin used by honey bees in their hives. It used to be thought that it was just used to stop draughts but it’s now been discovered that it is a powerful anti bacterial compound that the honey bees use to protect the hive from infection. Here’s an example – If a mouse climbs into a hive the bees will kill it. But it’s far to large for them to move outside. They will completely encase it in propolis and the propolis contains and prevents any bacterial infection to the hive.
Propolis has health benefits for us that are lost if it’s filtered out of the honey. Premium Raw Manuka Honey is not fine filtered.
